The First Course

Hi everyone!

I have decided to create this food blog for three reasons:

  1. After maintaining a diet of ham, deep-fried everything, and sangria for the last four months while I was in Spain, I was long awaiting the moment where I could finally enjoy vegetables, grilled chicken, and oatmeal again. Therefore, I have created this blog to document my re-introduction to healthy, satisfying, and non-artery-clogging food.
  2. Coupled with my outrageous spanish diet fed to me by my outrageous spanish host mom, some extra poundage was obtained.  In order to keep myself on track so that I can lose this poundage, I thought this blog would be an excellent motivation and reminder of the diet I need to be maintaining.
  3. I really just enjoyed blogging these last four months and didn’t want to stop, so I decided that “educating the public on my interpretations of a healthy diet” was a good excuse to keep going.

Because my posts are (hopefully) going to be containing healthy and delicious meals, I wanted to start this first one with one of my all-time favorite creations. Although I made this last summer and haven’t yet had the chance to make it again this summer, I still consider it one of the best.  Breakfast is by far my favorite meal, so it’s only fitting to feature pancakes in my first post.

Almond Butter Pancakes

After they were done cooking, I decided to add a few spoonfuls of plain non-fat greek yogurt on top, along with sliced almonds, blueberries, and half of a cut-up peach — WAY better than maple syrup (and much more visually appealing, I must say).
